EPICUREAN ENCOUNTERS

From rolling tree-covered hills to untouched grasslands, Corazon del Valle is home to some of California’s oldest wineries. Through tailored guided tours to the award-winning Frantoio Olive Grove and LJB and Lore Farms, guests can discover authentic food-producing customs and savor some of California’s finest wines. Participants also have a chance to become winemakers themselves within two days by creating customized blends.


Two-day Winemaker Experience

TWO-DAY WINEMAKER EXPERIENCE

Guests are invited to become professional level winemakers through an immersive two-day winemaker experience, culminating in cases of personally blended wines delivered to their homes. Participants witness grape harvesting and oxidation, and taste the Clos LaChance winery’s best wine. The first morning of the program begins with a Vineyard Tour, where guests become acquainted with the San Martin terrain and the rich harvests it has to offer. After a sumptuous lunch prepared by Rosewood CordeValle chefs, a Winery Tour commences, in which guests get to experience the “crush pit.” Lessons on aging techniques, filtering, bottling and sterilization follow. The afternoon culminates in a wine tasting session.

Day two, participants are greeted by the Clos LaChance sommelier, whom is eager to share his wealth of knowledge about the blending process. The group then makes 25 cases of wine with their own special blend. They can choose to deliver a full barrel of customized wine back home, or, alternatively, allow 24 months of aging before delivery. After arduous efforts, the class celebrates over lunch with a glass of the winery’s finest wine. The two-day program is concluded with the label design for each newly-created, custom-blended wine.

Guests are welcome to tailor their wine with special blends:
Option 1: Learn about blending and choose a full barrel of wine to be bottled and delivered directly to home.
Option 2: Customized special blend with 24 months for aging before delivery.

Frantoio Tour

FRANTOIO TOUR

The Frantoio Tour includes a visit to renowned Frantoio Olive Grove, a family-owned olive oil refinery. Guests are certain to be mesmerized by the beautiful and wondrous world of the olive fruit. Frantoio Grove’s olives are hand-harvested every year in late November and early December, and milled within hours of picking. The products - exclusive Tuscan blends - are more pungent and peppery than common oils. Guests get a chance to taste this wonderful concoction, and to go behind the scenes at the grove. To conclude the tour, guests can savor the distinct flavors of California’s provincial wines at Clos LaChance.

Farm Tour

FARM TOUR

The Farm Tour is an exhilarating ride into California’s heartland. LJB and Lore Farms are both family-owned and operated, and regularly supply the hotel with fruits and vegetables for its seasonal menus, including the delicious berries in guests’ breakfast baskets. Starting from the day that Luigi Bonino first set foot in the fertile San Martin soil nearly a century ago, it specializes in produce which is home-grown and nurtured - neither force-ripened nor frozen. Marking the end of the tour, at Clos LaChance, winery guests are served with premium wine from California’s selected wineries.

BESPOKE DINING

This tailored dining experience provided in Rosewood CordeValle is not only a doorway into a world of exciting gastronomy, but also the soul of the great Californian countryside. Prepared and executed by the Executive Chef Tim Wetzel, the five-course seasonal tasting menu displays the flawless combination of fine ingredients and culinary skills.


At Rosewood CordeValle, guests can enjoy a custom-created five-course seasonal tasting menu, prepared and executed by their Executive Chef Tim Wetzel. This unique Californian experience can be enjoyed in one of three different locations: the 9th Hole Tee Box, the hillside yoga deck, and the Clos LaChance Winery. The bountiful menus are crafted from the best that local farms, rivers and wineries have to offer. Throughout the dining process, Chef Tim conveys his personal cooking philosophy to guests, including how he procures all ingredients, what is in season, and how he manages to create this one-of-a-kind dining experience.
