With the largest array of seafood used to prepare ceviche in Mexico, this outdoor bar celebrates the bounty of the sea, presenting both Mexican and Japanese cuisines, complemented by a selection of the country's most exclusive tequilas.
During the day, the bar’s ceviche menu reflects the freshest and best seafood available in Baja, as well as offering new combinations and innovations in ceviche. The bar offers nearly 50 tequila varieties, all of which are 100% agave.
Guests can take a Tequila Lesson to learn about the history of tequila, the distillation process, the different types, its exacting certification standards and the appropriate way to drink it.
In the evening, the Tequila & Ceviche Bar is transformed into the Tequila & Sushi Bar. By fusing Japanese and Mexican culinary traditions and flavors the bar offers a sushi menu of deliciously original creations.
Sashimi items, including tuna, sea bass, shrimp and salmon, are dressed with mixtures of Japanese and Mexican ingredients – from chipotle, avocado and cilantro to ginger, soy and ponzu. The menu is paired with Las Ventanas' 100%-agave tequilas. Sake and Japanese beers are also available.
