BIO: Executive Chef Fabrice Guisset

A native of France, Fabrice Guisset had been in Mexico for nearly a decade and had become one of the country's most celebrated chefs when he took the culinary reins of Las Ventanas al Paraíso, A Rosewood Resort as Executive Chef in January 2007. Recognized for his creativity, skills and culinary knowledge, Chef Guisset elevated all of the menus and dining experiences at Las Ventanas with special touches and enhancements. But perhaps his most important, and inspired, addition has been "Cocina del Fuego." He introduced the little-known culinary art of fire cuisine to the Sea Grill at Las Ventanas. Chef Guisset is one of the world's few masters of this unique cooking technique focusing on wood-burning grills and ovens, and his new Cocina del Fuego cuisine at the waterfront grill has been heralded with rave reviews. His menu at the Sea Grill - based on the flavors imbued by the woods, fine olive oils and fresh herbs from the resort's herb garden - has generated renewed international culinary acclaim for Los Cabos and the destination's dining scene.

Chef Guisset came to Las Ventanas from Paraíso de la Bonita, the Five Diamond resort in Puerto Morelos in Mexico's Yucatan where he enjoyed widespread acclaim for his fusion of culinary styles. Previously, he served as executive chef at the La Jolla de Mismaloya Hotel in Puerto Vallarta and at the Camino Real Cancun. The native of Avignon, France, has been in Mexico since February 1998.
