The kitchen is headed by Head Chef Palash Mitra, who grew up in India and whose previous experience includes six years at the renowned Cinnamon Club in London, two years at buzzy Veda in Hong Kong and training at the prestigious Swiss Asian School of Hotel Management in Tamil Nadu. Palash was voted one of the top 20 Young Chefs to Follow by Tatler Magazine and was a semi-finalist for the UK’s National Chef of the Year in 2010 and 2011.
The dedicated team works with each guest to create personally tailored menus, with signature dishes including Wild Cumbrian Red Deer with Sautéed Potatoes, Rock Moss and Onion Sauce, Masala Chicken Livers With Green Peas, Tandoori Root Vegetables With Yoghurt Sauce, Bombay-Style Vegetables With Cumin Pao, Garlic Pepper Lobster, Meen Moilee And Thanjavur Chicken Curry.
