BIO: Executive Chef Carlos Hannon

Executive Chef Carlos Hannon joins Rosewood San Miguel de Allende after pampering guests as Executive Sous Chef at Rosewood Mayakobá in Riviera Maya. Prior to his stage at Rosewood Mayakobá, Hannon worked in various kitchens in Mexico and has studied and traveled in Japan, Europe and the United States. In 2008, he was the recipient of the Nestle Professional Creative Chef Award.

Mentored by renowned Spanish Chef Daniel Bausá, Hannon has acquired revolutionary cooking techniques that are combined with his expertise of Mexican cuisine. Hannon highlights his Mexican roots and his grandmother’s kitchen as strong influences in his culinary style and techniques. Passionate about organic products, Hannon will grow an organic garden at the resort to offer a healthy, balanced and unique culinary experience to every table.
