BIO: Chef de Cuisine Henry Zamora

Henry Zamora is the Chef de Cuisine of Madera, the signature Michelin-starred restaurant at Rosewood Sand Hill® in Menlo Park, CA. Chef Zamora brings a depth of experience, innovative cooking techniques and proven culinary expertise to Madera, having trained in Northern California’s most lauded fine-dining establishments.

Most recently, Chef Zamora was a Sous Chef at Quince in San Francisco where he managed the kitchen’s operations and assisted with dish development. During his tenure at Quince, the restaurant’s Michelin-star accolade was elevated from a one to a two-star rating, making it the only restaurant in San Francisco to receive an increased rating for the year. Chef Zamora previously spent time as Chef de Partie at the infamous three Michelin-star rated restaurant French Laundry, where he honed his culinary skills and greatly refined his cooking techniques. Other notable past positions include serving as Chef de Cuisine at Firefly Restaurant in San Francisco, CA and working as a Sous Chef at Chez TJ, the Michelin-starred restaurant in Mountain View, CA.

Earlier in his career, Chef Zamora worked as a Sous Chef and Line Cook for Aqua in San Francisco, where he built the foundation of his refined cooking experience. A graduate of the California Culinary Academy, Chef Zamora lives in Oakland, CA. 

At Madera, Chef Zamora is in charge of developing the menus and creating new dishes. He looks forward to introducing modern cooking techniques to the restaurant’s signature wood-fire grill to further enhance and highlight new flavors within Madera’s fresh, market-driven cuisine.
