Amsterdam | April 15, 2026 –  Eeuwen at Rosewood Amsterdam unveils a new chapter for the restaurant, introducing Mediterranean-inspired flavours, new cocktail experiences and an evolving approach to all-day dining. Rooted in conviviality and the rhythm of nature, Eeuwen's latest evolution invites guests to enjoy long lunches, spontaneous aperitivo moments, lively dinners and relaxed terrace gatherings. Led by Chef de Cuisine David Ordóñez, the restaurant continues to evolve its culinary identity through seasonal dishes with Mediterranean influences centred around craftsmanship, local provenance and effortless hospitality. Eeuwen, meaning “Centuries” in Dutch, is a nod to the Dutch belief to embrace the art of time in relation to food; knowing when to harvest, when to prepare and when to savor.

A NEIGHBOURHOOD RESTAURANT WITH MEDITERRANEAN SPIRIT

Known as a neighbourhood restaurant that welcomes both locals and visitors alike, Eeuwen elicits a warm,lively atmosphere centred around heartfelt cooking for shared moments around the table. Diners can enjoythe restaurant's hidden terrace, perfect for warmer months, while the Chef's Table offers an intimate experience alongside the open kitchen. For aperitivo hour or spontaneous evening drinks, Eeuwen’s restaurant bar, offer crafted cocktails in a relaxed, social setting.

In addition to the à la carte experience, Eeuwen has expanded its offering with dedicated lunch menus for business occasions, pre-theatre dining menus, celebratory holiday menus, and a signature Sunday brunch designed for slower afternoons in the city.

SEASONAL SEAFOOD, DUTCH PRODUCE AND CRAFTED COMFORT

The menu begins with a selection of refreshing small plates designed for sharing, including Zeeuwse Creuse Oysters, whipped cod brandade and mortadella focaccia. Seasonal dishes such as melon salad with feta and green shiso bring brightness to the table, while the sepia alla Luciana, a traditional Southern Italian dish slowly simmered for eight hours, evokes the comforting warmth and craftsmanship of generations-old Mediterranean home cooking. Among the hot dishes, guests can enjoy cod with artichoke barigoule and bagnet sauce, herb-marinated lamb chops with sea lavender, and the beloved Dutch asparagus. Larger dishes designed for sharing include saltbaked seabass, lobster broth rice with saffron aioli, and a 25-day aged bone-in ribeye.

COMPLEMENTED BY A PLAYFUL NEW BEVERAGE PROGRAM

Alongside the menu, Eeuwen introduces a refreshed cocktail and wine experience inspired by Mediterranean summers and Amsterdam’s blooming garden terraces. Guests can enjoy low-ABV cocktails, aperitivo-style serves, and rotating wines from Spain, France, Italy and Greece alongside a “Just 1N Case” wine experience featuring exclusive pours served by Coravin until each featured case is finished. Inspired by the hotel’s gardens by celebrated Dutch landscape designer Piet Oudolf, now blooming for the first time since the hotel’s opening, the cocktail selection incorporates fresh herbs, florals, and citrus notes through serves such as the Rhubarb Cobbler, Dill Cobbler, Thyme Spritz, and Sea Buckthorn Negroni.
