Dutch for “centuries”, Eeuwen offers a cultivated gastronomic experience where seasonal ingredients come together to celebrate the present – where every dish is orchestrated around the art of timing.
At Eeuwen, the culinary process follows the natural cycles of planting, harvesting, fishing, and feasting, allowing seasons to guide each decision. Techniques such as open flame, slow roasting, fermenting, and curing are thoughtfully employed to align with each ingredient’s need at a specific moment. The focus is on honoring the right moment – knowing when to act, pause, and enjoy. The result is a refined dining experience that is both natural and timeless.
Helmed by Chef de Cuisine David Ordóñez, whose experience spans renowned establishments such as Oud Sluis, Restaurant Fäviken, and Dinner by Heston Blumenthal, Eeuwen reflects his passion for culinary storytelling while embodying Rosewood’s A Sense of Place® philosophy:

Rooted in seasonality and provenance, the menus at Eeuwen are dynamic expressions of Europe’s finest ingredients, brought to life through Ordóñez’s ever-evolving culinary approach and Rosewood’s Partners in Provenance commitment. Working closely with trusted purveyors across the Netherlands, France, Belgium, Italy, Germany, and Spain, each ingredient is selected for its purity, flavor, and connection to the land or sea, whether it’s organic vegetables, responsibly sourced meats, fresh seafood, or dairy and eggs. Dishes are thoughtfully composed to highlight the essence of each element, often elevated by Ordóñez’s signature sauces. From refined dinner plates featuring Oesterij oysters from the Dutch village of Yerseke, seafood from Zeeland and the North Sea, every dish tells a story of its origin and season. At Eeuwen, time is not simply linear, but unfolds through each dish, reflecting its unique season, place, and purpose.
Equally attuned to this culinary philosophy is the restaurant’s design. Created in collaboration with interior design firm Sagrada, Eeuwen’s warm, botanical aesthetic draws influence from Amsterdam’s historical greenhouses. Natural materials like oak and linen reflect a quiet elegance, while the layout evokes gezelligheid – the distinct Dutch spirit of warmth and togetherness. For the team, their uniforms have been created by ‘By Rockland’, a specialist in stylish corporate wear, in partnership with designers Claes Iversen and Francisco van Benthum. With a dynamic and ever-evolving menu, no two experiences at Eeuwen are the same, each visit offering a new exploration of taste and time.
