Country Kitchen restaurant at Rosewood Beijing offers Northern Chinese comfort food, and resurrects classic “lost recipes” once beloved by Beijingers, all in the ambience of a rustic Chinese village with a stylish contemporary twist.  

The revived “lost recipes” of roasted and clay pot pork belly, which were popular fare amongst upper class Beijingers in the 1950s, can now be discovered and savored by modern diners. Time-honored favorites also on the menu include wood-roasted Peking Duck, grilled Lamb Shank and prized Hangzhou Aged Ham.

Walls of antique bricks collected from demolished buildings on the outskirts of Beijing, terracotta, wood-fire ovens and rustic chinaware, all add to the authentically warm and convivial surroundings. Enhancing the concept of a modern tribute to traditional Chinese dining, an outdoor terrace offers a vantage point to survey the city scene below and iconic CCTV Tower opposite. 
Chinese chefs at an open island kitchen create classic favorites, from wontons to dumplings, pancakes to pot stickers. Ensuring true home-grown flavor is Beijing-born master chef Leo Chai, who worked his way up the culinary ladder from his start in a humble local food kitchen.  Liang Jun Wei, the resident noodle master chef, hails from Shanxi province, acclaimed for its fine quality noodles. He is dedicated to producing hand-cut, pulled, knife-cut and rolled noodles fresh from scratch, including Beijing-style noodle with soy paste and steamed buckwheat noodles.  

To guarantee authentic flavors and freshness on a menu that changes by season, ingredients are sourced directly from producers such as Daxing Ronking farm, which is known for its Inner Mongolian lamb and organic pork, roots and green vegetables, and the Shunyi farm area for chicken and eggs.  

Topping off the Northern Chinese culinary experience, popular Beijing desserts such as soy bean ice cream with pear and almond tofu can be accompanied by Beijing’s traditional yogurt drink, jujube or smoked plum juice, or a range of artisanal Chinese teas.
