Under the helm of Executive Chef Fabrice Guisset and Executive Sous Chef Gustavo Pinet, the menu at The Restaurant reveals a deep respect for Mexico’s culinary traditions. Ingredients and techniques are rooted in the country’s long history, geography and customs. Inspired by our team members’ cherished culinary secrets, the menu features unique dishes and flavors that will bring you on a culinary journey through the many regions of Mexico. Our chefs have prepared a new gastronomic experience using Baja’s freshest, seasonal produce to introduce you to unique sauces, garnishes and other flavors that they grew up eating and cooking at home.

The award-winning wine program at The Restaurant celebrates the rich wine culture that exists in the Baja Peninsula. The wine list draws heavily on the lush Valle de Guadalupe region near Ensenada in northern Baja, famous for producing robust varietals on par with anything found in Napa or Sonoma or Bordeaux. Other intriguing global offerings include California's top vintage cult wines and distinctive wines from France, Italy and Spain to newly discovered selections from Australia, New Zealand and South America. The list is completed by world-class list of 18 wines by the glass, including Dom Perignon champagne. The Restaurant’s Tequilero or Tequila Master, welcomes the opportunity to pair Chef Guisset’s regional dishes with a wide selection of Mexico’s premier tequilas and mezcals.
