In the Heart of Val d'Orcia, between unique culinary experiences and new exciting experiences.
‘A Casa dello Chef’ – ‘Sapore di Mare’ – Paint & Sip
March 21, 2025
Under the leadership of the new General Manager Nicola Migheli, Rosewood Castiglion del Bosco celebrates its 10th Anniversary in 2025.
Montalcino, February 21, 2025 – Rosewood Castiglion del Bosco, the Tuscan Resort, located in the heart of the Val d'Orcia Natural Park, will reopen its doors for the grand season of its 10th Anniversary under the ‘Rosewood Hotels & Resorts’ brand on March 21, 2025.
Located in the heart of the Val d’Orcia Natural Park, a UNESCO World Heritage site, and within the Brunello di Montalcino production area, Castiglion del Bosco is set within a 5,000-acre 900-year-old Italian estate. It encompasses the ancient ruins of a castle from the 12th century, a 14th-century medieval church, and the borgo – the historic hamlet that today forms the vibrant core of the resort managed by Rosewood Hotels & Resorts – where the 42 Suites are nestled, surrounded by the Tuscan countryside - where the 11 Villas of the property are located.
The private Villas, set within the 5,000 acres of Tuscan countryside surrounding the Estate, are available year-round, offering an ideal retreat for nature lovers and those seeking privacy. Each Villa is unique, with its own distinctive hues and fabrics. They feature a heated private pool, spacious indoor and outdoor living areas, kitchens designed by Florentine designer Riccardo Barthel, and lush gardens with views over the iconic hills. In the Villas, service is impeccable, starting with a wake-up breakfast prepared by the Mamma in Villa – a housekeeper who attends to daily tasks and makes guests feel at home, followed by a wide variety of customizable activities that can be organized either within the total privacy of the villa or outside the estate – easily accessible by the provided 7-seat Land Rover Defender or similar 4x4 off-road vehicle.
Rosewood Castiglion del Bosco has two gastronomic identities: Osteria La Canonica – a typical Tuscan trattoria; and Ristorante Campo del Drago, which was awarded its second Michelin Star in the 2025 Michelin Guide Italy this past November. Here, the culinary proposal is original and ‘visceral’, inspired from the estate’s organic garden produce, located just a few steps from the kitchen. Executive Chef Matteo Temperini oversees the menus at both venues, always aiming to respect the seasonality of the ingredients while maintaining a balance between food, the land, and the community. Also available are the cooking school, two poolside bars, and the Lobby Bar.
For the Foodies
A Casa dello Chef: in the welcoming atmosphere of Villa Capanna, one of the most scenic spots on the estate, surrounded by the beauty of the Val d’Orcia and the vineyards of Castiglion del Bosco’s Winery, the Chef invites guests to a convivial dinner with a surprise menu. His secret dishes can not be revealed in advance, but will only be experienced at this new event of the season.
Sapore di Mare: a celebration of the richness of the Tyrrhenian Sea, by the pool. The sea arrives at CdB with this fish-based menu, created using carefully selected ingredients by Executive Chef Matteo Temperini and his trusted local suppliers. From delicate appetizers to the catch of the day, each dish represents the pure essence of the sea, with a harmonious blend of innovation and tradition.
Once again this year, Chef Temperini celebrates his love for cooking by inviting colleagues and fellow chefs to cook with him in the Amici in Cucina event, taking place between May and September. During this event, the Chef blends his creativity with renowned Michelin-starred chefs, creating a series of exceptional four-handed dinners. Each evening will feature the presentation of a unique 4-course tasting menu, to be enjoyed at Ristorante Campo del Drago. Meanwhile, during the iconic Dinner in the Vines guests can join a Tuscan barbecue at a communal table set among the vineyards, accompanied by the estate’s cocktails and wines.
For the art lovers: it is from the wine that the perfect inspiration can be drawn this year. A brush, a canvas, some colors, and a glass of Brunello – this is all you need to unleash your creative flair and capture the stunning landscape surrounding the Resort, sip by sip, during the brand-new painting activity, Paint & Sip.
For those who wish to take home a unique souvenir, the Perfume Laboratory offers the opportunity to create their own fragrance, for themselves or for their home, based on olfactory preferences. Among the many essences available, you’ll find everything from the most classic to the most refined, including a special fragrance crafted specifically with herbs from the Rosewood Castiglion del Bosco kitchen garden.
For wine lovers, it only takes a few steps to reach the Castiglion del Bosco Winery, directly from the Suite or Villa.
In addition to classic tastings, the winery offers a wide range of experiences, including the possibility to organize private tastings in the Villa, vertical Brunello tastings, and seasonal activities such as the harvest, which both guests and non-guests can take part in to discover the secrets behind this world of ancient traditions. Castiglion del Bosco is a historic winery and one of the largest producers of Brunello di Montalcino, as well as a founding member of the Consorzio del Vino Brunello di Montalcino in 1967. Oenologist Cecilia Leoneschi oversees the harvest rituals, a two-phase manual selection process, and aging in barrels, all within the 4,000 m² winery. A must-do experience is in the Members’ Cellar of the Castiglion del Bosco Winery, one of the Resort’s signature experiences: Dinner with Brunello or a private helicopter flight over the Brunello region – Fly Brunello.
For wellness enthusiasts, The Spa reveals a new offering for the year: in the treatment menu, designed to maintain a strong connection with the region and its ancient holistic wisdom, the use of surrounding natural elements such as Tuscan herbs, olive oil, and grape seed oil, introduces the Seasonal Experiences. Inspired by the different times of the year and their fruits, these are new wellness journeys dedicated to each season. The year begins with spring and the Primula (primrose) special treatment: a symbol of spring and youth, known for its soothing and purifying properties. This includes a relaxing and nourishing massage with springtime notes, followed by a floral bath, organized in the privacy of your Suite.
Within the estate, golf aficionados can once again enjoy The Club – the only private golf club on the peninsula, designed by the legendary champion Tom Weiskopf – and the elegant and welcoming Club House, which also features a restaurant open from spring to autumn.
“We are ready to inaugurate a new season at Rosewood Castiglion del Bosco, with the same enthusiasm and passion as always. This year, however, is even more special: we celebrate the tenth anniversary of Rosewood in this extraordinary estate, a milestone that fills us with pride and motivates us to look ahead with even more dedication.
After two years spent at Castiglion del Bosco, assuming the role of Managing Director feels like a natural step, a confirmation of the commitment I have always had towards this property, the team that brings it to life, and the guests who choose it.
I will continue with the same passion and dedication to enhance what has made Castiglion del Bosco a symbol of refined hospitality, deeply connected to its land and history. At Rosewood, we believe that people and places enrich each other, and this principle guides every experience we offer.” – said the new Managing Director, Nicola Migheli.
Rosewood Castiglion del Bosco will extend, once again, its opening until January 7, 2026, and throughout the year, new experiences will be created to celebrate this special year.
