A Taste of Italy Arrives at Rosewood Schloss Fuschl this Summer

This June, the lakeside Seeterrasse at Rosewood Schloss Fuschl becomes the setting for an exclusive Italian culinary pop-up, inviting guests to experience the flavors and spirit that will define Rosewood Rome when it opens its doors in 2027. Created in collaboration between Rosewood Schloss Fuschl’s Culinary Director Julian Schwamberger and Culinary Director of Rosewood Rome Massimiliano Ziano, the summer-long experience is inspired by the flavors of coastal Italy and invites guests to discover the region’s most beloved traditions against the turquoise waters of Lake Fuschl.

The collaboration also marks a milestone for the brand, reflecting Rosewood’s continuous expansion in Italy. Building on its established presence in Tuscany, Rosewood is set to open Rosewood Rome in 2027, with Milan and the renowned Hotel Bauer Venice joining the portfolio in the years ahead. Leading the collaboration in Fuschl is Chef Ziano, who brings over 30 years of international culinary experience to the lakeside setting and has worked closely with Chef Schwamberger to craft the menu. His culinary philosophy is rooted in the rich traditions of southern Italy, where fishermen and family-run producers along the shores of Campania, Puglia, Sicily and Liguria have long relied on exceptional ingredients, simplicity and regional authenticity.

The menu opens with antipasti including Fiori di Zucca Fritti with Amalfi lemon, mint and ricotta, and Prosciutto Crudo d'Osvaldo with buffalo mozzarella, heirloom tomatoes and peaches, alongside Zuppa di Pesce, a seafood stew of prawns, mussels and Lake Fuschl fish. From the pasta course, highlights include Spaghettoni with vongole and bottarga, Tagliolini al Pomodoro and Ravioli Ricotta e Spinaci with sage and lemon butter. Secondi and sharing plates, among them Cotoletta alla Milanese, Orata Grigliata and Tagliata di Manzo o di Pollo, are made for a long, leisurely lunch or dinner.
