Bar Les Ambassadeurs unveils its new menu inspired by nearly three centuries of History
Evolving in step with the seasons, Hôtel de Crillon’s resident bar launches a selection of new cocktails that evoke the defining moments of one of Paris's most legendary addresses.
The iconic Parisian Bar Les Ambassadeurs at Hôtel de Crillon, A Rosewood Hotel, will unveil a new cocktail menu on the 6th of September. Drawing inspiration from historical anecdotes, influential personalities and pivotal moments that have shaped both the hotel and the bar, the collection transforms heritage into a contemporary cocktail experience.
Designed by Benjamin Nolf and his team, the menu features twelve new cocktails that guide guests chronologically through the story of Hôtel de Crillon, from the architectural vision behind its founding in the eighteenth century to the cultural icons and distinguished guests who have contributed to its legacy over the decades. Each cocktail has been carefully crafted to interpret a chapter of history through flavour, texture, aroma and presentation.
The journey begins with 1758, inspired by the construction of Place Louis XV and the emergence of the grand façades that would come to define one of Paris's most celebrated landmarks. Combining Mezcal Illegal, Ketel One Vodka, Vermouth Blanc, Kalamansi, Falernum and Verjus, the cocktail captures the ambition, innovation and spirit of discovery that characterized the Age of Enlightenment. Alongside it, Ange pays tribute to the visionary architect Ange-Jacques Gabriel, whose masterful designs shaped the iconic façades overlooking Place de la Concorde. This serve is a refined blend of Brugal 1888 Rum, Citrus and Delicate Floral Notes, embodying his pursuit of timeless elegance.
The menu continues with Le Duc, commemorating the acquisition of the residence by the Crillon family in 1788. Rich and warming, it evokes the intimate years when the building was a family home through a decadent mix of Zacapa Solera Gran Reserva, Oloroso Sherry, Honey, Quince, Spices and Chocolate. Inspired by another notable chapter of the property's history, Marie-Antoinette honours the young Queen's piano lessons held within the residence, through a delicate blend of Tanqueray Ten, Peach, Caramel and Coconut.
Several creations pay homage to Place de la Concorde and the historic events witnessed from Hôtel de Crillon's windows. Rouge Concorde captures the transformative spirit of the French Revolution and the ever-changing identity of the square through a composition of Don Julio Blanco, Hibiscus, Cacao, Dolin Vermouth, Maraschino Cherries, Chambord and Campari. Fleur de Lys recalls the intellectual and artistic salons that flourished amongst the French aristocracy during the nineteenth century. This is a sprit-forward cocktail created with Michter’s Bourbon, Suze, Noilly Prat Ambre Vermouth, Suze, Vetiver and Chocolate Bitters. Lastly, L'Obélisque celebrates the arrival of the Luxor Obelisk in 1836, through a complex blend of Rémy Martin Cognac, Manzanilla Sherry, Verjus, Apricot and Angostura Bitters.
Celebrating the arrival of international travellers at Hôtel de Crillon in 1909, Transatlantic evokes the romance of grand voyages and cultural discovery through a blend of Mujen Original Shochu, Timur Pepper, St-Germain, Verjus and Cucumber, creating a bright and refreshing cocktail that recalls ocean crossings and the excitement of arriving in Paris for the first time. Honouring generations of diplomats, statesmen and cultural figures who have gathered beneath the palace's gilded ceilings, Les Ambassadeurs combines The Balvenie 12-Year-Old Double Wood Whisky with Cachaça, Date, Vermouth, Absinthe and Palo Santo. Les Aigles reflects the historic conversations, celebrations and political milestones that have unfolded within the palace's salons by mixing Ketel One Vodka, Cold Brew, Oloroso Sherry, Pecans and Smoked Black Tea.
The final chapter celebrates the personalities who helped shape the spirit of Hôtel de Crillon. Bernstein is inspired by renowned conductor and composer Leonard Bernstein, a devoted guest of Hôtel de Crillon, bringing together WhistlePig 10-Year-Old Rye Whiskey, Fernet-Branca, Maple Syrup, Green Cardamom and Birch Water to create a bold, vibrant and elegant serve. Completing the collection, Icône celebrates Hôtel de Crillon's contemporary chapter and enduring influence on fashion, culture and style. Through a crystal-clear blend of Another Hendrick's Gin, Italicus, Ketel One Vodka, Dry Vermouth, Jasmine and Absinthe, finished with drops of Black and White Sesame Oil.
Blending craftsmanship, storytelling and heritage, the menu transforms centuries of history into twelve immersive serves, inviting guests to experience Hôtel de Crillon's remarkable legacy one chapter at a time.
