Riviera Maya, Mexico – This February, toast to the rich diversity, beauty and flavor of Mexico with the inaugural Yo ♥ Mexico Celebration. Guests are invited to join Rosewood Mayakoba chef Juan Pablo Loza as he welcomes internationally-celebrated chefs including Rick Bayless, Edgar Nuñez and Javier Plascencia for a weekend that showcases the culinary heritage of Mexico and the creations of local artisans and makers. From an intimate garden party with the chefs under the sparkling, strewn lights of La Ceiba Garden & Kitchen to a beachfront feast, guests can indulge in the best of Mexican cuisine under the stars and discover locally-made beer, wine, tequila and mezcal, as well as hand-crafted goods created on-site.

Taking place from February 22-24, the resort will kick off 2019 with a series of interactive events including pop-up experiences with Mexican artisans and sips from Mexican tastemakers including Montelobos Mezcal, Cerveza Akumal and Adobe Guadalupe Vineyards. The celebration will begin on Friday evening, where guest chefs will come together to create a multi-course culinary experience at the resort’s La Ceiba Garden & Kitchen. This magical evening under the Ceiba tree will pay homage to the Mayan heritage of the region, and will feature local sustainable produce and regional cooking techniques.
The main event will then be hosted on Saturday night with a culinary showcase featuring signature dishes prepared by guest chefs and host chef Juan Pablo Loza, with proceeds benefitting Centro Educativo K’iin Beh, a local elementary school funded by friends and associates of Rosewood Mayakoba offering local youth and children of resort associates a comprehensive, bilingual, full time education and scholarship-based enrollment.
Throughout the month of February, guests can enjoy signature taco creations developed by Rosewood Mayakoba’s celebrity chef friends at the resort’s newest beachfront hideaway, Aquí Me Quedo. Recently debuted in December 2018, this new oasis is an adults-only, private enclave inspired by the residential style of a grand seaside home and the relaxed, natural beauty of nearby Tulum. Visitors can feast on options including Lobster Tacos with bean puree, Hoja Santa and local chorizo by Chef Enrique Olvera and Chicken Thigh Tacos with guacachile and green onions by Chef Rick Bayless.
