Nan Bei at Rosewood Bangkok Reopens with “Taste of Hunan” Dishes
Nan Bei, Rosewood Bangkok’s vibrant, modern restaurant for Chinese dining, celebrates its reopening on June 22, 2022, with a special limited period, fiery “Taste of Hunan” dishes added to its popular line-up from June 22 until September 30 of authentic cuisines from the northern and southern regions of China.
During his recent eight-month sojourn in his native China, Executive Chef Geng explored the country to study new recipes to bring back to Nan Bei. He was inspired by his journey to the South Central province of Hunan to recreate the cuisine in Bangkok and he returned to the City of Angels with an arsenal of family recipes, hand-picked premium ingredients and new plating techniques.
“A Taste of Hunan” features six exciting new dishes showcasing the region’s spicy, bold flavors. Hunan is known for its use of vinegar-pickled chilies and a signature cooking technique called bian (煸) or the art of wok-frying in oil. The delectable new dishes include Wagyu Beef Tenderloin with green peppers, chilis and Hunan oyster sauce; Kurobuta Pork Ribs with crispy pickles and peppers; and organic Chicken Fillet with pickled pepper sauce served alongside a tangy chili dipping sauce.
Nan Bei continues to serve its classic, beloved signatures like the Peking Duck, Squirrel Fish, Tiger Prawns with Salted Egg and Xiao Long Bao. The restaurant’s open kitchens are dedicated to the preparation of popular Southern Chinese seafood dishes and the world-famous Peking Duck.
Chef Max Li, master of the Peking Duck, serves up the traditional dish just as they did back in the 14 th century Yuan Dynasty. Carved tableside, the duck is accompanied by with thin pancakes, granulated sugar, sliced cucumbers, leeks and sweet bean sauce. To conclude, the remnants of the duck are savored in rich broth or wok-fried with salt and pepper.
Fanciful design touches in the restaurant are inspired by the lyrical Chinese folktale of the Weaver Girl and Cowherd. Legend has it that separated lovers reunited once a year on the 7 th day of the 7 th month by crossing a bridge made of magpies. Nan Bei also displays a custom-woven art feature that stretches the length of the ceiling, in homage to the Weaver Girl who weaves clouds for the sky. A dazzling light installation of 600 illuminated birds in flight also references characters in the tale.
