Restaurant Campo del Drago at Rosewood Castiglion del Bosco wins its first Michelin star

Guida MICHELIN Italia 2023 has bestowed a coveted star on our Ristorante Campo del Drago.

November 8, 2022 - Campo del Drago, the Italian restaurant in the heart of Rosewood Castiglion del Bosco’s medieval borgo, has won its first Michelin star.

Located in the countryside of Montalcino, in the heart of the UNESCO World Heritage Site of Val d’Orcia, the gourmet restaurant is set within one of the oldest and best-preserved estates in Italy.

Tuscan-born Executive Chef Matteo Temperini, Maître D’ Maikol Calosci and their kitchen and service teams offer guests an epicurean journey through this fairytale region’s gastronomic culture in a warm, intimate atmosphere. Matteo only sources ingredients from his native Tuscany, personally selecting suppliers from the local community. He also invests a lot of time looking after the Resort’s orto (organic kitchen garden) alongside the resident horticulturalist, to let vegetables take centre stage in every dish at Campo del Drago.

Dishes from Matteo’s acclaimed repertoire include the Beef Stew Tortello Pasta, ‘Panforte’ Spices, Black Truffle. This typical filled pasta – the tortello – is filled with slow cooked beef combined with spices used in a century-old Senese pudding called ‘Panforte’, a dish dating back to the Middle Ages. This mix of sweet and sour, delicately surrendering to shaved black truffle, is a full immersion into Tuscany’s history on a plate.

About Executive Chef Matteo Temperini

Born in March 1974 in Poggibonsi, near Siena, Temperini’s eagerness to hone his culinary skills led him to France, where legendary Alain Ducasse appointed him first sous chef in his Parisian restaurant Spoon - Food and Wine, and later as chef de partie at his renowned three-Michelin-star establishment Le Louis XV in Monaco.

This stellar apprenticeship was followed by work experiences in New York, Lugano and Macao, which helped Matteo to broaden his gastronomic horizons. Back in Italy, a stint as chef de partie at the world-famous Enoteca Pinchiorri in Florence was followed by a headline role at the restaurant that earned him, in 2002, his first Michelin star, Il Gallopapa in Castellina in Chianti. In 2008 Matteo became Executive Chef at the world-famous Le Sirenuse Hotel in Positano, leading their La Sponda restaurant to its first Michelin star in 2011, an accolade it has maintained ever since.

He joined Rosewood Castiglion del Bosco’s Campo del Drago in 2019.
