August 2024 – Rosewood Bangkok is delighted to announce the appointment of Hugo Bertolini as the new Executive Chef. Born in Argentina to Italian parents, Chef Bertolini brings a rich tapestry of cultural and culinary influences to his new role.

Chef Bertolini's culinary journey began in 2000 in Spain, where he started as a young chef with a passion for creating bold, authentic dishes. Over the years, his career has taken him across Latin America, Central America, Europe, and Asia, where he has continually honed his skills and expanded his culinary horizons. His cooking style is centered around fire and original flavors, emphasizing environmental sustainability and the use of local resources.

In his distinguished career, Chef Bertolini has gained invaluable experience with Hyatt Hotels and worked alongside Michelin-starred chefs, including the renowned Gordon Ramsay. His exceptional skills and dedication to his craft led him to join Rosewood Phnom Penh in 2019 as Chef de Cuisine. His talents quickly earned him a promotion to Cluster Executive Sous Chef, a role in which he was instrumental in the successful opening of Hoiana Resort. This expansive project included two new World Hotels, a golf course, a beach club, and 12 F&B outlets, totaling 1,000 rooms.

Chef Bertolini's commitment to culinary excellence is further evidenced by his membership in the prestigious Disciples de Escoffier, a globally recognized nonprofit association dedicated to promoting gastronomy. His culinary philosophy is deeply rooted in sustainability and innovation, ensuring that each dish reflects his passion and respect for the environment.

As the new Executive Chef at Rosewood Bangkok, Chef Bertolini will oversee the hotel’s culinary operations, bringing his unique approach to culinary artistry to the forefront. His diverse experiences and commitment to sustainability align perfectly with Rosewood Bangkok’s vision of providing exceptional, environmentally conscious dining experiences.
