Rosewood Bangkok Presents A New Afternoon Tea Inspired By A Chef’s Love For His Parents
The afternoon tea experience is designed by Dustin Baxter, the hotel’s new Executive Pastry Chef who recently joined from Rosewood Phnom Penh, where he oversaw the pastries and desserts offerings for all seven of the property’s celebrated dining destinations.
For the latest afternoon tea at Rosewood Bangkok, he drew inspiration from his parents, whose wedding anniversary is on Valentine’s Day. As a young pastry chef working in distant locations such as Koh Samui, Dubai, Chicago, the Michigan-native would privately create a special dessert for his parents to celebrate their love every year.
For the afternoon tea experience, Chef Dustin reinterprets the vibrancy of love into bright colors, presented by red fruits and berries. The sweet selection also draws on the quintessential flavor of love—chocolate.
The Lychee Rose Tart, a nod to his mother’s love of desserts, combines pistachio, marinated lychee and raspberry rose cremeaux, with some rose water added for an homage to mothers.
Other creations include a Chocolate Dipped Cherry—a cherry curd and chocolate mousse cake that shaped like its namesake; a Triple Love Heart Shaped Cake; Salted Caramel Cake made with chocolate sponge and caramel ganache; and a Fig Éclair made with Strawberry Jam and White Chocolate Chantilly.
The sweet treats are complemented by a Foie Gras Cornet topped with Berry Compote, as well as equally indulgent savory bites such as a Tomato Tart, Chorizo Sandwich, Cured Salmon Tart, and Rose Shrimp Cocktail. Completing the menu are White Chocolate Chip Scones, which come heart-shaped and served with berry jam and clotted cream.
For the afternoon tea, Chef Dustin incorporated the art piece “Beginning of Love” by Napat Pukavanatch, an acrylic painting through which the artist chose to express the passion to live a fuller life in red and white hues while utilizing the word “love”. Drawing parallels to love itself, Napat’s art evokes brightness and dark.
“The Memory of Love” Afternoon Tea is priced at THB1,350++ per person, per set including tea or coffee, available at Lakorn European Brasserie from 1 February until 31 March 2023.
