Rosewood Mayakoba to Host Rosewood Miramar Beach’s Michelin-Starred Caruso’s
Acclaimed Southern Italian Restaurant Brings a Taste of the American Riviera to Riviera Maya, Highlighting Local Ingredients.
Riviera Maya, Mexico – Rosewood Mayakoba Following a successful Rosewood Mayakoba summer residency at Rosewood Miramar Beach, the luxury properties will reverse roles this winter, bringing a taste of Coastal Californian and Italian flavors to the Yucatán Peninsula. Newly minted from California’s 2022 MICHELIN Guide rankings, Caruso’s features a coveted one-star rating as well as a Green Star designation for the team’s sustainable efforts, and will be available at Rosewood Mayakoba beginning December 13, 2022.
Caruso’s will take residence at Casa del Lago, Rosewood Mayakoba’s sophisticated lagoon-side destination, through Spring 2023. The wintertime collaboration offers an inspired menu showcasing Rosewood Miramar Beach’s Culinary Director Massimo Falsini’s Southern Italian heritage and California sensibility through a Mexican lens. This will include a range of specialty dishes, a selection of Central Coast wines, and Caruso’s classic cocktails.
Chef Massimo and Rosewood Mayakoba’s Culinary Director Juan Pablo Loza share a passion for sustainability, which earned both properties esteemed accolades including Caruso’s Michelin Green Star and placement on the James Beard Foundation’s Smart Catch list; Rosewood Mayakoba’s recognition as a Come Pesca ambassador; and both resorts’ certification on the Monterey Bay Aquarium’s Seafood Watch Program. In this spirit, the partnership will incorporate the highest quality Yucatán ingredients, including locally sourced seafood and produce. Menu highlights include but are not limited to:
Riviera Tomato Gazpacho: sourdough croutons, agrumato
Hand Pulled Burrata & Prosciutto Di Parma: arugula, balsamic vinaigrette, pane di casa
Spaghettoni Cacio e Pepe: sarawak peppercorn, pecorino romano
Seared Red Snapper: Oaxaca heirloom corn maque choux, corn nage
