Rosewood Phuket’s Ta Khai Uncovered: Sustainability, Cuisine and Cinema

Phuket, Thailand | February 17, 2025 – Conservation and sustainability lie at the heart of Rosewood Phuket. Since its opening in 2017, the concept, design and operation of the resort was undertaken with a clear focus and long-term commitment to protecting the environment of this beachfront sanctuary on Emerald Bay, an area which covers 43 acres (17 hectares) of coastline, forest, hillside and wetland landscape. The resort’s wider commitment to help its natural environment include a net-zero approach to water usage, food composting, an energy-efficient building design, energy conservation and renewable energy harvesting, efforts which have earned the resort a LEED Gold verification for its sustainable achievements - one of Thailand's first hotels to earn this certification.

On the culinary front, Rosewood Phuket partners with local farmers and producers, personally handpicked by our chefs, to reduce their and the resort’s carbon footprint. Approximately 70% of produce and protein at the resort are sourced locally (this was achieved in 2023) from the resort’s ‘Partners in Provenance’ initiative. Highlights include cereal and fruit-fed beef from Khunta Farm, Siberian sturgeon caviar from Hua Hin Sturgeon Farm, responsibly produced grouper and red snapper from EcoAquaculture, and Sangyod Mueng rice from Phattalung. The resort’s goals – among others – have stretched to the transformation of one restaurant concept into a business with purpose. Rosewood Phuket signature restaurant Ta Khai is helmed by local couple Uncle Nun and Aunt Yai and sources 100% of ingredients locally, with many coming from Ta Khai’s own organic herb and vegetable garden, where the food compost program is cultivated back into nature to nourish the soil.

Repurposed materials create a rustic Thai village ambience with ocean views and the stage for a responsibly sourced Thai menu. Ta Khai chefs collaborate closely with nearly 20 top-quality local farmers and partner producers who deliver the finest regional produce, meats, and locally specific ingredients for its seasonal menu changes. For an enduring culinary experience, Ta Khai also offers cooking classes where guests can select fresh, quality ingredients at the local market. Guided step-by-step through expert cooking processes, they learn to enhance flavors while understanding how each ingredient nourishes the body according to Thai principles, and the role of home-grown foods in Thai daily life, history, and legend.

And did you know that this favourite dining destination just made it to the big screen? As TV fans eagerly awaited the debut of HBO’s most acclaimed series last night (16 February 2025, season 3), the island of Phuket is highlighted in several settings for the iconic HBO show. Among the picturesque locations featured across Thailand, Ta Khai, inspired by traditional Thai fishing villages, emerges as one of the island’s most treasured dining destinations and provides an enchanting backdrop for the drama and intrigue that will unfold in the show.
