Edgar Beas has been appointed executive chef of Rosewood Inn of the Anasazi, Santa Fe’s most highly acclaimed luxury boutique hotel. In his new role, Beas will lead the talented culinary team at the renowned Anasazi Restaurant, Bar and Lounge, which unveiled a stunning new design in 2015, and will continue to innovate in the kitchen with new seasonal menu concepts that emphasize the vibrant flavors of the Southwest.

Chef Beas joins Rosewood Inn of the Anasazi following his most recent position as a chef de cuisine at Madera, the Michelin starred signature restaurant at Rosewood Sand Hill in Menlo Park. During his tenure, Chef Beas was in charge of developing new dishes that elevated vegan and gluten-free dining while artfully integrating the seasonal produce from Northern California. Prior to Madera, Chef Beas held the position of executive chef at San Francisco’s Chez Papa Resto following his international training in Spain.

Chef Beas is a graduate of the San Diego Culinary Institute and began his formal culinary career as a line cook at Addison Restaurant in San Diego. He then joined El Bizcocho, where he worked as chef de partie, and later trained in Spain at Martin Berasategui Restaurant, where he learned from Chef Martin Berasategui himself. Upon his return to the U.S., Chef Beas served as executive chef at Chez Papa Resto in San Francisco and later joined Madera as a chef de cuisine.
