Rosewood Hotels & Resorts' first Master Charcutier, Denivaldo Cruz Souza, transforms time, craftsmanship and expertise into one of the property's defining culinary signatures.
When the first 12-month cured ham produced at Rosewood São Paulo was finally ready, Denivaldo Cruz Souza asked someone to capture the moment. After spending an entire year carefully monitoring its evolution day after day, he wanted to know whether all that patience had been worthwhile. The knife sliced through the ham, its aroma filled the room, and the answer became immediately clear.

The moment perfectly reflects Denivaldo's work. In charcuterie, there are no instant results. Time is an ingredient, a raw material and often the greatest challenge. A pepperoni requires at least two months before it is ready. A cured ham may take one or even two years to mature. Between the beginning of the process and the first slice lies a quiet routine of observation, adjustments and patience.
It is this routine that Denivaldo has led since the opening of Rosewood São Paulo. At 57 years old, he holds a unique position: he is the property's first Master Charcutier and the only professional to occupy this role across the entire Rosewood Hotels & Resorts collection. Created exclusively for the São Paulo operation, the position has established charcuterie as one of the property's signature culinary experiences.
More than introducing an unprecedented department within the brand, the charcuterie program reflects Rosewood São Paulo's culinary philosophy of producing, whenever possible, ingredients and products in-house that would traditionally be sourced from external suppliers. The initiative allows the property to maintain greater control over quality, craftsmanship and the identity of what is served to guests.
Today, Rosewood São Paulo's charcuterie produces more than 20 artisanal products, including pancetta, coppa, cured pork loin, bresaola, pepperoni, lardo and a variety of handcrafted sausages. While some preparations require only a few weeks, others demand months—or even years—of maturation, always respecting the natural rhythm of each recipe.
Much of this work happens away from guests' eyes. Every one or two days, Denivaldo visits the maturation chambers to monitor each piece. He checks texture, firmness, fat composition and moisture loss. Instruments help measure the process, but experience remains just as important.

The next challenge is already underway. With the arrival of a new maturation chamber, Rosewood São Paulo plans to expand production, allowing the property to produce an even greater share of its cured meats and charcuterie in-house. Looking ahead, the long-term ambition is to produce enough to supply the hotel's operations while eventually offering select products for purchase—an increasingly common request from guests eager to take a taste of Rosewood São Paulo home.
Curiosity has always been the driving force behind Denivaldo's career. His relationship with meat began long before the word "charcuterie" became part of Brazil's culinary vocabulary. Trained as a butcher, he has worked with meat since 1987. For 22 years, he managed the butcher shop at Hospital Israelita Albert Einstein, where he first began experimenting with curing techniques while preparing ingredients for the hospital's kitchens.
After more than two decades, he chose to leave the stability of that role in pursuit of deeper knowledge. He joined a specialty butcher focused on dry-aged meats, where he refined his understanding of maturation techniques. Later, at another newly opened luxury hotel, he was challenged to develop an entirely new charcuterie operation from the ground up.
First came a salami. Then a mortadella. Along the way came mistakes—which ultimately became lessons.

Since Rosewood São Paulo opened, Denivaldo has helped build the property's entire charcuterie operation, establishing production processes, refining recipes and developing dozens of products now featured across the hotel's restaurants.
The choice of ingredients has also evolved over time. Initially working with conventionally raised pigs, he sought a higher level of quality. Transitioning to heritage black pigs significantly elevated the final result, particularly through the superior quality of the fat and the animals' husbandry. Today, suppliers are located within approximately 200 kilometers of the property, supporting a sourcing philosophy rooted in proximity, traceability and quality.
Despite these technical advances, Denivaldo believes charcuterie's greatest challenge in Brazil remains cultural.
