Rosewood Abu Dhabi is excited to announce the newest addition to its dynamic team, Liborio Colonna, who joins as Executive Chef. Born in Bari, Italy, Liborio began his culinary journey at the age of 13, gaining valuable experience working alongside a diverse range of chefs.
Chef Liborio brings over 15 years of culinary expertise, amassed from his time at esteemed restaurants and luxury hotels, he is adept at maintaining staff focus and productivity in high-pressure, fast-paced environments. Throughout his career, Chef Liborio has demonstrated his exceptional leadership skills, effectively supervising large teams and spearheading the culinary operations of renowned establishments. His proficiency in fine-dining cuisine, menu development, and ingredient sourcing has contributed to the success of numerous ventures. His focus is on nurturing his team's professional growth, fostering a collaborative environment, and instilling a sense of creativity so that they can evolve and consistently produce exceptional work. As a leader, his distinguishing personality trait is an unwavering commitment to adaptability.
Prior to his appointment at Rosewood Abu Dhabi, Chef Liborio served as the Pre-Opening Executive Chef at The Dubai EDITION Hotel, where he played a pivotal role in shaping the culinary direction of the property. Additionally, his time at Myrra Restaurant, Demind Group, saw him develop and plan menus that showcased the flavours of Greece and Spain with a distinct and innovative approach.
With a keen eye for detail and a commitment to culinary innovation, Chef Liborio is poised to elevate the dining experience at Rosewood Abu Dhabi, enriching the hotel's culinary offerings and delighting guests with his creative dishes and dedication to excellence. One of his immediate priorities is to foster a culture of continuous learning within the kitchen, imparting new skills and recipes to the staff daily.
