Florian Kraemer is a seasoned pastry chef with over 25 years of international experience, bringing his refined craftsmanship and creative flair to his current role as Executive Pastry Chef at Rosewood Abu Dhabi. Since joining the property in 2024, Florian has been instrumental in leading the pastry and bakery operations across the hotel’s outlets, most notably playing a pivotal role in the evolution and success of Majlis by Pierre Hermé.
Florian has been central to the ongoing development of the Majlis concept in the UAE capital, drawing on his global expertise to ensure the outlet upholds the exceptional standards synonymous with the Pierre Hermé brand. From mentoring the pastry team to innovating new recipes and refining execution, he continues to elevate the guest experience through elegant, technically precise creations. His focus on quality, flavour, and artistry has made Majlis by Pierre Hermé a standout destination for high-end patisserie in Abu Dhabi.
Florian’s career is defined by his commitment to excellence, team development, and innovation. He has trained under Meilleurs Ouvriers de France (M.O.F) chefs at institutions such as Bellouet Conseil and Cacao Barry, he consistently pushes boundaries in design, taste, and culinary storytelling. His leadership at Rosewood Abu Dhabi is shaping the property’s pastry identity while inspiring a new generation of chefs in the region’s luxury culinary scene.
Prior to his current role, Florian held executive roles in prestigious properties around the world, including Mandarin Oriental Guangzhou and The Peninsula Shanghai. He has led diverse teams and curated bespoke desserts for luxury brands such as Louis Vuitton, Dior, and Chaumet. Renowned for his mastery of chocolate work, seasonal creations, and modern French techniques, Florian blends traditional savoir-faire with contemporary culinary trends to deliver visually striking and flavour-forward pastries.
