The evening begins with a guided garden foraging tour before sitting down to a five-course tasting menu created by Kārena and Kasey. Each course is inspired by the surrounding whenua and moana, paired with wines exclusively from Māori-owned wineries or thoughtfully crafted non-alcoholic elixirs.

Karena and Kasey Bird are award-winning chefs, authors and television hosts from Maketū, New Zealand. After winning MasterChef New Zealand in 2014, they have created acclaimed pop-up events and award-winning dining experiences across Aotearoa, published bestselling cookbooks, and hosted international food series’.
Their work celebrates kai as a vessel for memory, culture and connection, blending modern techniques with the traditions and landscapes of te ao Māori. In 2023 & 2025, they were named among the Cuisine Top 50 Women in Food in New Zealand.
