This October, Kona Village welcomes Rubén Rolón of Dallas' Bar Colette for a special pop-up at Shipwreck Bar & Sushi and Talk Story Bar. Guests will enjoy exclusive cocktail specials at each venue, showcasing flavors and inspirations drawn from Rolón's travels around the world.
Nominated for a 2025 James Beard Award for Best New Bar, Bar Colette has earned national recognition for its refined and imaginative approach to cocktails. Located in Dallas' West Village, the intimate bar is led by Michelin-recognized Bar Director Rubén Rolón, whose career includes roles at L'Atelier de Joël Robuchon and Le Jardinier in Miami. There, he received recognition from the inaugural Michelin Guide Miami through the Florida Exceptional Cocktails Awards before moving to Dallas to helm Bar Colette's beverage program. Inspired by travel, culture, and nostalgia, Rolón's cocktails are known for their precision, creativity, and unexpected sense of storytelling, helping establish Bar Colette as one of the country's most exciting cocktail destinations.

Join Rubén Rolón at Shipwreck Bar & Sushi as he takes the helm behind the bar aboard our restored schooner. Inspired by Hawai`i's local ingredients and the memorable flavors Rolón has discovered throughout his travels, this special menu features three original cocktails, including a non-alcoholic creation. Guests may also enjoy selections from Shipwreck Bar & Sushi's signature cocktail menu.
This experience is open to both resort guests and the local community. Please note that Shipwreck Bar & Sushi does not accept reservations.

Rubén Rolón returns for a second evening, bringing his signature cocktail experience to Talk Story Bar. Set against the golden-hour, oceanfront views of Kahuwai Bay, guests can enjoy a curated selection of Rolón's travel-inspired creations, alongside favorite cocktails from the Talk Story Bar menu.
