When it first opened its doors at Rosewood Hong Kong in 2019, Butterfly Patisserie was an instant hit with its customers. Word spread rapidly of the extraordinary taste and artfully decorated cake and pastry creations inspired by the pioneering vision of Ivan Suardi, Group Vice President – Food & Beverage. Since its opening, Butterfly Patisserie has gone from strength to strength adding more varieties of cakes and pastries and to its growing repertoire sweet gastronomy. The core range of desserts on offer are modern interpretations of classic desserts, recreated with a twist. The signature round shape and colours of pastry items take inspiration from the iconic butterfly artworks of Damien Hirst that grace the walls of the lavish, elegant interior of the adjacent The Butterfly Room.

Iconic Butterfly Design
The Butterfly Patisserie wing motif translates through every aspect of the brand from its interior design and artworks to the desserts and even down to the menu, which combines a free hand cursive calligraphic style with its bold black and white design.
Designed by renowned interior designer Tony Chi, Butterfly Patisserie features a gleaming arcade-inspired rotunda that connects to The Butterfly Room, Rosewood Hong Kong’s all-day lounge concept and elevated Cha Chaang Teng brasserie, Holt’s Café.
One cannot help but be mesmerised by the opulent interior that features divine centerpieces which houses a wonderful array of tiered cakes. Jewelry styled vitrines showcase rows of mouth-watering handmade gelatos and sorbets for guests to discover. These are complemented by the striking cross-cut marble cut arabesque cotto countertops finished with exotic mirror and travertine inlays, which are accentuated by the filament lightbulbs that illuminate the antiqued walnut mirrored ceiling. The chic silver wall covering designed by Gracie Studio, adds to the jewelry box atmosphere.
A Sweet Team for Success
As ‘Dessert Dining’ and ‘Afternoon Tea’ become a lifestyle option for cake lovers everywhere, Butterfly Patisserie is riding the crest of this trend and continues to evolve its offering by taking the art of cake making to new frontiers. “Our ever-growing collections of artisanal cakes and desserts have become hugely popular,” said Suardi. And following its runaway success in Hong Kong, Butterfly Patisserie is expanding to the Mainland and is set to open new venues at Rosewood Hotels in Beijing and Guangzhou in June. In Guangzhou, extraordinary culinary creations will be headed up by Richard Hilton, Director of Culinary, Rosewood Guangzhou.
The pastry team in Rosewood Beijing is responsible for coordinating all pastry related creations. Signature pastries available across all three Butterfly Patisserie locations, include Mille Feuille with its inimitable vanilla chocolate cream filling, Black Forest Cake, a reinvention of Black Forest Gateau as well as more innovative desserts such as the Butterfly Kisses, a refreshing yet indulgent medley of chocolate-covered marshmallow and zesty fruit gelée. Today these iconic desserts are synonymous with the brand itself and Butterfly Patisserie’s customers simply cannot get enough of these sweet delights many of which sell out on a daily basis.
Reimagining the Classics
The vision behind Butterfly Patisserie cake success belongs to a culinary legacy steeped in classic European traditions, which have been tailored to suit the Asian palate. The reworking of these traditions into something new have been achieved through a process of finessing and mastering classic European pastry and cake making and then twisting these traditions to create something different. No less than forty rounds of revisions were undertaken to perfect the Mille Feuille. Butterfly Patisserie’s ethos it to seek out and work with only the finest of quality seasonal ingredients and flavours from around the world, which is reflected in the extraordinary quality and taste of these cakes, which are always freshly baked and served daily.
At the counter, guests can savour an assortment of eight pastries and 15 cakes and indulge themselves in an elegant setting in all three locations. Butterfly Patisserie’s unique offering includes a plethora of innovative pastries, classic and exotic cakes as well as a selection of eight gelatos and sorbets showcasing seasonal tastes of Europe infused with flavours from Asia and Japan.
Favourite scoops include Tahitian Vanilla and Caramel Sea Salt or the more exotic, palate-tingling blends such as Mango Sorbet and Uji Matcha Green Tea ice cream. Time-honoured classic cakes on offer include elegant Chiffon Cakes and finger cakes such as the Strawberry Chiffon Cake and White Cheese & Yuzu Cake. “Decorating a cake is an art but blending the right mix of ingredients together is a science,” said Suardi. “The desserts are in fact works of art in themselves, delicately crafted and available in a kaleidoscope of bright colours and interesting shapes to make them look as good as they taste.”
The more chocolaty sweets, marshmallows and nougats are reimagined creations with new elements added such as tea-infused jams featuring sour cherry, rooibos, mango and lapsang souchong. Fine chocolate on offer comes in a colorful array of tablets and bars crafted using two proprietary blends – the Or Noir is 71.5% dark chocolate while Lait D’Or is a lusciously creamy blend of 46.2% milk chocolate.
Japanese Influence– The Land of the Rising Cake
Prior to launching the first Butterfly Patisserie in Hong Kong, Sonia Cheng, Chief Executive Officer of Rosewood Hotel Group together with Suardi embarked on a mission to Japan to peruse the finest cake shops to discover the best pastries the country has to offer. Japan is renowned for having the best desserts in Asia so what better place to go for sweet gastronomic discovery. The knowledge and experience gained from this trip greatly influence the ingredients and flavours Butterfly Patisserie uses in the creation of cakes and pastries, which gives them their unique and distinct taste. The divine Strawberry Chiffon Cake include Japanese chiffon sponge together Hokkaido cream in its ingredients.
A Kitchen Dedicated to Sweet Gastronomic Delights
Out of their dynamic kitchen, the talented team produce up to a staggering 1,000 cakes in 4 days, which include seasonal and celebration cakes such as Moon Cakes and Christmas desserts. In 2020 alone, Butterfly Patisserie consumed 15 kilos of vanilla, 15 tonnes of cream and 9 tonnes of chocolate to become one of the best sellers of Mille Feuille in the world.

The initial concept behind Rosewood’s iconic Butterfly Patisserie was to create an elegant and charming patisserie in the style of a ‘high jewellery atelier’.
