WHAT IS YOUR BACKGROUND? 

With a background in biotechnology and a deep respect for the region’s heritage, David oversees initiatives that reduce impact and restore balance—from eliminating single-use plastics to reusing over 50,000 liters of treated water daily for the hotel’s gardens. His work reflects a commitment not only to sustainability, but to the community and cultural landscape that define San Miguel de Allende. 

WHAT ARE ROSEWOOD’S SUSTAINABILITY STANDARDS? 

At Rosewood San Miguel de Allende, sustainability is central to daily operations and long-term vision. Guided by Rosewood Impacts, the hotel emphasizes circular hospitality and community enrichment. A key initiative is the on-site wastewater treatment plant, reusing up to 50,000 liters of water daily to nourish gardens, preserving resources while maintaining lush surroundings.

A purification and bottling system has replaced single-use plastic bottles, and all room amenities and kitchen operations have eliminated plastics, reinforcing a zero-waste approach. Biodegradable detergents are used in the laundry, reducing environmental impact.

The hotel prioritizes regional sourcing of seasonal, ethically produced ingredients. Restaurants minimize food waste by donating leftovers to local farms, supporting animal feed and the circular economy. A hydroponic garden is underway to grow produce and compost on-site.

Recognized by GSTC, Zero Waste, and Food Made Good, Rosewood San Miguel de Allende honors tradition, uplifts community, and protects the land for future generations.

WHAT IS ON THE HOTEL AND HOW HAS IT BEEN RESTORED?   

Rosewood San Miguel de Allende is where heritage, hospitality, and sustainability converge. Located in a UNESCO World Heritage city, the hotel blends colonial Mexican charm with a forward-thinking commitment to environmental and social responsibility. Circular hospitality is central, ensuring every aspect—from guest experiences to operations—supports a regenerative model.

Since 2023, the hotel’s waste recycling program has diverted over 85% of solid waste from landfills, aiming for 90%. Food waste is donated to local farms for animal feed, reducing methane emissions. A water purification system eliminates plastic bottles, providing clean water for associates and guests. Biodegradable detergents are used in laundry, and the VERDES program invites guests to skip daily linen changes, conserving water and energy.

Through Rosewood Empowers, the hotel uplifts underserved communities, promotes inclusive hiring, and donates essential goods locally. Guests are encouraged to connect with this purpose, from savoring locally sourced ingredients to embracing sustainable practices, becoming part of a shared journey toward positive impact.
