HOLBORN DINING ROOM PARTNERS WITH OLLIE BASS OF FABER TO UNVEIL A NEW SEAFOOD COUNTER, BRINGING THE VIBRANCY OF BRITAIN'S COASTLINE TO THE HEART OF LONDON.

Rosewood London’s grand British brasserie, Holborn Dining Room, is pleased to introduce a new Seafood Counter in exclusive collaboration with Ollie Bass, Executive Chef of the sustainability-focused restaurant Faber. This seasonal summer offering celebrates the very best of locally sourced British coastal ingredients, delivered direct from day boats and trusted producers across the UK’s shores.
The partnership is a natural extension of Holborn Dining Room Head Chef Ilona Perczyk’s culinary philosophy, which puts seasonality, British produce, and simplicity at the forefront of every dish. Together with Bass, whose work at Faber has earned acclaim for working directly with local fishermen and coastal producers, the new counter showcases the authentic taste of Britain’s coastline in the heart of London.
The stylish, relaxed, and intimate seafood counter, located at the centre of the restaurant, offers guests two ways to experience this coastal collaboration. A selection of Faber dishes will be available à la carte throughout Holborn Dining Room, showcasing ingredients sourced directly from Britain’s coastal communities including Maldon oysters with rhubarb mignonette; torched Sussex Do’ya oysters with wild garlic and crème fraîche; Chalkstream trout tartare with soy, keta caviar, and nori; and John Dory – sourced from day boats along the British coasted – paired with smoked eel and asparagus. For a showstopping sharing option, the Faber Shellfish Platter (£130) brings together the finest catches from specific regions: Maldon oysters, Dorset devilled crab from Portland waters, Paignton lobster, and Chalkstream trout tartare, served with a vibrant strawberry hot sauce.
The British Shores Tasting Menu (£95, with an optional £85 English wine and drinks pairing) offers a deep exploration of the UK’s coastline through a series of seasonal courses. Each dish from the eight-course menu tells the story of its origin – from the seaweed farms of Pembrokeshire to the oyster beds of Essex - celebrating both provenance and the hands that harvest these ingredients.
Dishes include sourdough-glazed Pembrokeshire lobster with radish, rosemary, and buttermilk - a summer highlight featuring the region’s prized native lobsters, finished with an in-house developed glaze - and Dorset devilled crab with an aged Cheddar biscuit, bringing together two British icons that celebrate the world-class shellfish of Portland and the bold character of heritage Cheddar. The experience closes with brown butter madeleines with dark chocolate, a nostalgic nod to traditional British seaside favourites.
