A native of Mexico City, Fernando Estrada joined the team at Rosewood San Miguel de Allende in 2016 and has since assumed the role as chef at the hotel’s Luna Rooftop Tapas Bar.
In his current position, Fernando oversees culinary direction for Rosewood San Miguel de Allende’s iconic rooftop restaurant, artfully marrying the venue’s Mediterranean-inspired food menu with authentic Mexican ingredients and techniques.
Fernando previously held the position of chef at Rosewood San Miguel de Allende’s traditional Mexican outlet 1826 Restaurant, where he explored his passion for heritage ingredients, sustainable sourcing, and regional specialties like mole. Prior to arriving at the hotel, Fernando spent six years honing his craft at various restaurants within the Mexican hospitality group Grupo Orraca.
In the kitchen, Fernando enjoys preparing dishes that shine a light on the rich diversity of Mexican cuisine and pay homage to native ingredients and ancestral techniques of the region. With each dish, he aspires to connect guests with a sense of place and tell a deeper story of Mexico.
Fernando earned a degree in gastronomy from the Universidad UniverMilenium in Mexico City. He currently resides in San Miguel de Allende, Mexico.
