Fromagora Cheeses are made in a local cheese factory located in San José de Gracia, 20 minutes out of San Miguel de Allende. Owner Patricia Hernández has been creating and producing artisan cheeses since 1978. The results of 30 years of experience are her line of high quality cheeses which support an entire community. One of our chefs will guide you through this culinary experience.

This experience can be enjoyed by up to six guests at a time.

The importance of the Market in Mexico is historical. Since prehispanic time, people have gone to the market every day to buy fresh products from local producers. Polita has created a place that encourages people from La Trinidad, a small ranch near San Miguel de Allende, to cultivate sustainable products that are offered to a few selected restaurants in the region. Located in Dolores Hidalgo, Cuna de Tierra winery,  seamlessly integrates the vineyards with The Torre de Piedra, a steel and wood lookout point where one of our chefs will prepare delicious snacks that will harmonize with the aftertastes of this local wine. The Tour includes guided visits to vineyards, their fermentation aging rooms and a detailed explanation of the entire process - from the grafting of the vines to their breeding. One the best Tequila Bars in the entire state of Guanajuato, with over 100 premium tequilas on display. Tasting and savoring this traditional spirit is an educational experience and a great way to get acquainted in one of Mexico's oldest traditions. You will first learn the basics of tequila followed by the artisanal elaboration process of this national spirit. This initiative is born out of respect for local farmers and indigenous agriculture. The concept emphasizes in maintaining a seasonal and diverse menu featuring local fare. One of the most important advantages of Rosewood San Miguel de Allende is that our producers are located within close proximity allowing our chefs to visit them on a weekly basis to review their seasonal offerings. We aim to source all our meats from nearby farms which also allow us to ensure the quality of the same. All of our suppliers work on an ethical and sustainable manner which allows for a free-range food menu focus.
