Lennon’s bar at Rosewood Bangkok is elevating beverage sustainability to delicious new heights in partnership with ecoSPIRITS, the world’s first closed-loop spirits technology that strives to reduce the carbon impact of premium spirits by up to 80% by eliminating single-use glass bottles. A menu of ingeniously enjoyable ecoCOCKTAILS crafted with locally sourced ingredients, complemented by ecoSPIRITS’ low-waste technology, is now being served in all restaurants and bars.
“Our ecoCOCKTAILS menu maximizes our waste reduction and creates incredible tipples for our patrons, so it’s a sustainable win-win for both bar and guests,” says Guiseppe Carneli, Bars Manager at Lennon’s, who has enthusiastically adopted the emerging low-carbon revolution across the bar industry.
In 2020, ecoSPIRITS estimated that more than 40 billion glass bottles of spirits were consumed worldwide, with the vast majority ending up in landfills. ecoSPIRITS is a revolutionary development for the waste-heavy bar and beverage industry. It eliminates glass and cardboard packaging waste, whilst dramatically improving shipping, storage, and cost efficiencies for high-end spirits with reusable 4.5L ecoTOTES™ containers. After being emptied, ecoTOTES™ are returned, sanitized, fitted with tamper-proof seals and re-distributed back to bars and restaurants.
Carrying the concept even further, the ecoCOCKTAILS menu is printed on sustainable compostable paper, embedded with tree seeds. Guests can take the menu home and plant it in soil -- as the paper composts away, all that is left behind is new life and zero waste.
As part of the collaboration, Rosewood Bangkok debuts four new tipples at Lennon’s: the ecoMALI, the ecoKOKO, the ecoSOM and the ecoSOON. The Thai-named tipples are inspired by each key ingredient in the sustainable cocktails.
The ecoCOCKTAILS at Rosewood Bangkok are created in partnership with Kosapan Distillery and Sea’s Kombucha. The Nonthaburi-based Kosapan Distillery created Kosapan Botanicals, a line of distillates made with primarily organic local produce. Lennon’s has been closely working with the head distiller and founder, Yann Triffe, to create a sustainable, unsweetened line of distillates that can be used in multiple ways. Sea’s Kombucha, an artisanal craft brewery, has created three kombucha varieties available in all Rosewood Bangkok restaurants and bars, including Coffee and Passionfruit, Mango and Mint flavors.
The word “mali” means jasmine flower in Thai, an ingredient in the Kosapan Botanicals rum used to make the ecoMALI cocktail, priced at THB640. This unique drink is a twist on the French 75 and is made with re-carbonated Champagne. Lennon’s gives the noble Champagne new life: once flat, it is mixed with raspberries, various acids and then re-carbonated in-house.
“Koko” is the Thai word for cacao and 100% Thai-grown Chumpon cacao is the main ingredient in Kosapan Cacao Botanical which is featured in ecoKOKO cocktail for THB530. The core of this drink is Plantation Original Dark that adds body as well as a touch of sweetness. The Coffee and Passionfruit Kombucha made in partnership with Sea’s Kombucha is the perfect mixer that adds a touch of acidity as well as dark, chocolaty notes from the Thai coffee.
“Som” is the Thai word for orange that is the refreshing citrusy note of the Kosapan Orange Liquor component of the ecoSOM, available for THB500. The easy to drink tipple is made with a touch of lacto-fermented mango honey that adds more complex flavor as well as extends the mangoes shelf life.
“Soon” in Thai means zero and this non-alcoholic cocktail is made with alcohol-free gin, vermouth and bitters, available for THB450. This alcohol-free bevy is a take on the popular cocktail, 1919, featuring local botanicals including green oranges and jasmine flowers. The drink uses Lennon’s house-made SOON vermouth which contains classic botanicals as well as leftover ingredients used in the bar on daily basis, rounded out by a non-alcoholic bitter.
