An expanded journey through China’s regional cuisines starts this month

Rosewood Bangkok is proud to introduce a newly reengineered menu at Nan Bei, the ultra-luxury hotel's signature Chinese restaurant, showcasing authentic flavors from both the northern and southern regions of China, from which the restaurant draws its name.
Curated by Executive Chinese Chef Matthew Geng, the updated menu features regional highlights that offer a genuine Chinese culinary experience, including Braised Chicken Abalone, a dish Chef Geng first encountered in a small Beijing restaurant at the beginning of his career. Chef Matthew also shares a cherished family recipe for Shanxi Hot Oil Noodles, transporting guests to his home country with this traditional delicacy dating back to the Ming Dynasty.
Embracing Rosewood's "Partners in Provenance" philosophy, Chef Matthew collaborates closely with local farmers and producers for Pork with Sweet and Sour Sauce. This dish features organic pineapple and free-range pork, highlighting the restaurant's commitment to sourcing locally. Nan Bei further enhances its authentic Chinese menu with A Sense of Place by showcasing Honey Glazed White Prawn, a testament to the quality of seafood available in Thailand, and personally chosen by Chef Matthew to enrich the palate of local guests with the seafood that features prominently in both local and Chinese cuisines.
Chef Matthew also presents contemporary twists on traditional Chinese dishes, exemplified by Foie Gras Vermicelli, inspired by the classic Cantonese dish, underscoring the rarity of authentic vermicelli stew in Thailand and the luxury of foie gras.
Born and raised in Beijing, Executive Chinese Chef Matthew Geng boasts over 25 years of experience in five-star establishments across China. His culinary mastery shines through the menu, which includes classic favorites like the restaurant's renowned Peking Duck, prepared in the traditional fashion dating back to the Yuan Dynasty in 1330 A.D., meticulously carved tableside and served with thin pancakes, granulated sugar, sliced cucumbers, leeks, and sweet bean sauce.
The menu is thoughtfully organized by preparation methods, further divided into Northern and Southern specialties. For example, the Roasted section includes the indulgent Whole Suckling Pig, while the Steamed Seafood section features Uni steamed with eggs and sesame oil and Razor Clams in garlic, black pepper, and dried chili.
The Dim Sum & Dumplings selection, on the other hand, includes Siu Mai, Spring Rolls, Xiao Long Bao, Pot Stickers, and Snow Fish Dumplings. Additionally, the menu offers an extensive selection of small plates, soups, bird's nest dishes, iron & clay pot creations, wok-fried delights, freshly hand-cut noodles, and refreshing desserts.
Situated on the 19th floor of Rosewood Bangkok, Nan Bei offers an authentic Chinese dining experience within an art deco interior inspired by the traditional Chinese folklore of "The Cowherd and the Weaver Girl." Complementing the culinary experience is Nan Bei's sleek and seductive bar, which celebrates modern Asian libations and offers specially selected fine whiskies and exquisite Chinese teas.
Nan Bei’s new menu is available from 15 September 2023 onwards, available for lunch (11:30 a.m. to 2:30 p.m.) and dinner (6 p.m. to 10:30 p.m.) daily.
