Rooted in authenticity and all things local, the resort continues to be the guiding leader of Baja California and Mexico’s luxury travel movement.
Alebrije Restaurant
Under the helm of Executive Chef Victor Palma and Chef Alessandro Rizzo, the daytime menu at Alebrije restaurant reflects a deep sense of respect and admiration for Mexico’s culinary traditions, with ingredients and techniques like the comal that reflect the country’s long history, its vast size and its many customs and eating habits. However, in the evenings, Alebrije’s menu transforms courtesy of Chef Alessandro Rizzo into a celebration of Italian culture and tradition. Chef Rizzo was instrumental in the formation of the new Italian menu, bringing his family recipes and culinary secrets and transporting them into the kitchen of Las Ventanas to present a menu that is both sophisticated and authentic.
Another aspect that’s distinctly evident in the menu is a list of ingredients sourced locally from within the region. An often-missed fact outside of Mexico is that the Baja Peninsula is both one of the hottest culinary destinations in Mexico as well as the resource for some of the country’s best produce. Executive Chef Palma and his culinary team pay homage to this by foraging from the area’s top farms like Miraflores Farms, Cacachila Ranch, and Bendito Mar Oyster Farm, as well as from his own organic herb and produce garden on the resort. Based on the principle of “locally sourced, nationally inspired,” the menu at Alebrije reflects the seasonality of its produce and changes accordingly.
The award-winning wine program at Alebrije celebrates the rich wine culture that exists in Mexico. The wine list draws on the verdant Valle de Guadalupe region near Ensenada in northern Baja but also intriguing global offerings from California's cult wines to distinctive wines from France and Italy, as well as growers' Champagnes and niche wineries. The restaurant also offers a world-class list of 17 wines by the glass.
La Cava Wine Room at Alebrije
La Cava, Las Ventanas’ beautiful wine cellar private dining room at Alebrije, is a truly unique and exclusive environment for private events by special arrangement, or guests may join the Chef’s Gourmet Table degustation dinners. Guests dine in a magnificently decorated room surrounded by 3,000 of bottles of the finest wines. Chef’s Gourmet Table dinners are held every Thursday, Friday and Saturday evenings for up to 12 guests and feature a special five-course tasting menu showcasing the unique cuisine and flavors of the Baja Peninsula. Executive Chef Victor Palma guides guests on a gastronomic journey while the resort’s sommelier carefully selects appropriate wines for each course, many from the Baja region. Dinners start at 7:30 p.m. and reservations are required. For personal dining events, the Chef works closely with guests to plan an individualized menu and evening tailored to their preferences.
Cocina del Fuego at The Sea Grill
The Sea Grill, located at the sand’s edge, offers all-day dining inspired by coastal Latin cuisine, including breakfast specialties, casual lunches, and evening cocktails or dinner framed by spectacular sunsets. From grilled fare to fresh ceviches and shellfish, Sea Grill’s menu offers the ultimate “Cocina del Fuego”, with dishes cooked on wood-burning grills and a wood-burning brick and clay oven. Two types of local woods are used: mesquite for meats because of its stronger flavors, and mauto, which is milder, for fresh seafood.
Arbol Restaurant
Árbol presents elevated coastal cuisine inspired by the sea, guided by Chef Khampan Pukdangpan from Thailand. Asian influences shape the menu, with spices from India and the Far East adding depth and contrast.
Seafood and shellfish lead the selections. Curries, Wagyu beef, vegetarian dishes, and sushi, nigiri, and sashimi round out the experience. A dedicated sake sommelier offers curated pairings, with guided tastings designed to complement each course of your journey. Baja’s finest ingredients shine through in every dish.

Step into an extraordinary omakase at Arbol, curated by Chef Khampan — a soulful journey inspired by nature and Japanese tradition. Omakase del Mar honors Baja’s bluefin tuna, responsibly caught off Ensenada and prepared nose-to-tail through expressive courses, from flame-seared collar to bone broth. Tequila & Ceviche Bar
At the Tequila & Ceviche Bar, guests can sample a wide variety of culinary treats and delicacies, including innovative ceviche, created with the largest array of seafood used to prepare ceviche in Mexico; a premier tequila menu featuring the world’s rarest expressions, such as Grandes Maestros Tequila Ft. Francisco Toledo Extra Añejo; and a sushi fusion that blends Japanese techniques with Mexican culinary traditions. The ceviche and sushi are original recipes, offering the freshest and best seafood available locally. The nearly 50 tequila varieties are all 100% Agave Tequilas, Mexico's best which are certified by the government to exacting standards.
La Botica
The region’s first speakeasy, La Botica is a clandestine piano bar designed after a vintage apothecary. It features live performances by the resort's Artist in Residence and a cocktail program focused on prohibition classics, botanical infusions, and sophisticated non-alcoholic spirits.
Back to the Roots In The Herb Garden
This immersive dining experience transcends a mere meal—it’s a journey back into Mexico’s ancestral traditions and culinary heritage. This isn’t just dining—it’s an active participation in pre-Hispanic culinary technique, offering a tangible connection to Mexico’s cultural roots. Guests can learn the secrets of a slow, all-day cooking tradition of local lamb barbacoa conducted by the resort’s chefs. A unique, traditional Mexican BBQ that celebrates ancient ancestral corn and its versatility in Mexican gastronomy. Guests can observe as our chefs start the day by preparing the barbacoa and complementary accompaniments over an open fire and then await guests to return to our lush and fragrant Herb Garden in the evening to enjoy the results.

Las Ventanas arranges uniquely romantic, candlelit dinners for couples in a variety of intimate locations – such as our Beach Picnic with a bonfire roaring; a Stargazing Dinner on the beach with your personal constellation guide during dessert to help you explore the heavens; The Plaza on the resort’s highest point with spectacular views and perfect for fireworks displays; dinner in a private Beach Cabana at sunset with a private plunge pool; and our Rooftop Terrace dinner in your suite for the most spectacular sunsets. The private dinners are individually customized to your needs and desires, from bespoke menus to the brand of champagne to the music.
