RESERVATIONS
The Manor Bar welcomes both resort guests and local visitors on a first-come, first-served basis, and reservations are not required. For special occasions and celebrations, reserved sofa seatings are available for groups of 2 up to 12 guests with the following minimum spends:
Sunset Seating (before 7:00 p.m.) — USD500 minimum spend
Dusk Seating (7:00 p.m. and later) — USD800 minimum spend

Born in Madrid, Javier brings a global perspective shaped by time in Vienna, San Diego, and now Santa Barbara. A Les Roches graduate with a strong luxury foundation, he pairs technical expertise with a warm, people-first approach. Known for his attention to detail and approachable style, he’s a natural trainer who elevates teams through coaching, mentorship, and genuine care.
