Discover a treasure trove of tempting confections at Rosewood Hong Kong’s cake shop

The first taste of nouveau retail hospitality concept The Butterfly Patisserie begins at the gleaming arcade-inspired rotunda that also leads to Rosewood Hong Kong’s all-day lounge concept The Butterfly Room and elevated Cha Chaang Teng brasserie, Holt’s Café. Modelled after a high jewellery atelier, the elegant environs of The Butterfly Patisserie showcase custom furniture in conjunction with breath-taking centrepieces of tiered cakes, rows of artisan gelatos and sorbets, and glass walk-in display cases twinkling in each corner. The jewel box atmosphere is further enhanced by marble countertops and exposed filament lightbulbs casting a warm glow on the antiqued walnut mirrored ceiling and chic silver wall covering by Gracie Studio.
The stunning creations at The Butterfly Patisserie are borne from the imagination and skill of resident pastry chef Holger Deh. For the past two decades, Chef Deh has been sharpening his pastry making prowess, channelling his flair for inspiring and delicious desserts into his role as Area Executive Pastry chef for Asia at Rosewood Hong Kong. Deh’s pastry programme runs the gamut from exquisitely crafted chocolates to contemporary pastries, Japanese-driven sorbets and more. Signature items that will call The Butterfly Patisserie home include beloved classics such as Black Forest Cake (a nod to chef Deh’s Germanic roots) as well as more inventive confections such as the Patisserie’s signature Butterfly Kisses, a refreshing yet indulgent medley of chocolate-covered marshmallow and zesty fruit gelée.
With Deh at the helm, The Butterfly Patisserie is set to strike a tempting tone in the city – a beacon for indulgent sweets and seasonal treats crafted with innovation, expertise and flair.
A Rainbow of Confections
The pastry programme at The Butterfly Patisserie features a wealth of sweet delights. The fine chocolate is a highlight in itself, with a colorful tapestry of tablets and bars crafted using two proprietary blends – the Holger Deh Or Noir is 71.5% dark chocolate while Lait D’Or is a lusciously creamy 46.2% milk chocolate. Pastries will strike a contemporary note, while showcasing classic textures and flavours, with the selection of eight gelatos and sorbets set to incorporate the seasonal tastes of Europe, with influences gleaned from Asia and Japan. Indulge in comforting favourite scoops such as Tahitian Vanilla and Caramel Sea Salt, or more exotic, palate-tingling blends such as Mango Sorbet and Uji Matcha Green Tea ice cream.
A towering procession of tiered cakes are feats of skill – available for pre-order, the cakes on display revisit artisan techniques with time-honored classics: signature cheesecakes blending baked and mousse styles, elegant Travel Cakes enrobed in divine chocolate such as the Chocolate & Fleur de Sel Caramel and Uji Matcha & Yuzu, and luscious Black Forest Cake add to the versatility of The Butterfly Patisserie’s offerings. Not to be outdone, the chocolaterie confections – sweets, marshmallows and nougats – reimagine the sweets of Deh’s childhood, with new elements infused into the mix such as tea-infused jams featuring sour cherry and rooibos and mango and lapsang souchong.
Come mid-Autumn festival, The Butterfly Patisserie will be serving up handcrafted mooncakes, while other seasonal specialities and holiday creations await to impress throughout the year.
The Butterfly Beckons
The Butterfly Patisserie is the central focal point - flanked by Rosewood Hong Kong’s Event Lobby on the one side and the extended Guest Lobby on the other – as a conduit linking other destinations within the hotel, namely all-day lounge destination dining at The Butterfly Room, and elevated Cha Chaan Teng brasserie Holt’s Café.
Renowned New York design tour de force Tony Chi emphasises the seamless flow between the different locations, although guests will know the moment they enter the Patisserie, as sweets and glittering confections take centre stage. As guests wander throughout The Butterfly Patisserie, the gleaming creations on display reveal themselves, with four walk-in cases highlighting a curated selection of artisanal teaware, Travel Cakes, biscuits and haute chocolaterie, fashioned in the spirit of a high jewellery atelier. The finishes adorning the Patisserie are similarly opulent, with cross-cut Italian arabescotto marble countertops complemented by smooth travertine stone walls, mirrors and custom furniture to evoke the sensations of a lavish modern patisserie atelier.

The Butterfly Patisserie is set to become the go-to destination for artful delectable creations to gift, with Chef Holger Deh’s exquisite handmade patisserie and chocolaterie items available to purchase, as well as for pre-order.
Chef Deh showcases two decades’ worth of expertise and pristine technique to craft his vivacious range of signature pastries, desserts and confections, as well as seasonal local speciality items such as mooncakes, which will evoke Rosewood Hong Kong’s A Sense of Place philosophy through the edible artistry on display.
