Hôtel de Crillon, A Rosewood Hotel and symbol of French elegance is continuing its sensorial dinner series this September, with its very own Executive Chef and Sommelier, Xavier Thuizat and Chef of its Michelin-starred restaurant L’Écrin, Boris Campanella. The experience will see Hôtel de Crillon continue its partnership with experts of the sensory field, introducing guests to the unique and immersive experience of the gastronomic senses and world of art, through exclusive menus created especially for the activation.

Each sensorial dinner will be tailored to awaken guests’ senses, whilst offering a multisensory and immersive experience which will enlighten them to be open to their senses of smell, sight, taste, touch and sound. The exclusive series, which launched in spring 2024, will continue its five-dinner activation throughout May to November 2024 at L’Écrin restaurant within Hôtel de Crillon.
A “back to school” dinner to celebrate the taste
The third dinner of this series will celebrate the ‘Molecular Harmony Creators’, in a unique gastronomic experience created by flavour specialist and international sommelier François Chartier. François, who has specialised in French spirits and wine since 1994, will be partnering with Xavier Thuizat to create a completely unique gastronomic menu for the dining guests to enjoy. The dishes will identify molecules present in French cuisine ingredients and wines, to create new and unique tastes which marry together to create a harmony of the palate.
“Bringing rocks to the glass” thanks to the touch
For the fourth dinner of the series, the focus will be on the sensation of rocks with renowned French geologist Georges Truc. This menu will explore the five emblematic vineyards, through the sensory experience of rocks which have been extracted from the fields during a wine tasting. Guests can explore the feeling of the rocks alongside a paired guided exploration of the wines, and the translation this provides to the palate.
Listen to the symphony of champagne bubbles
For the final dinner of the series, Hôtel de Crillon will partner with the iconic and historic Champagne Krug Maison, to create the ultimate sensorial experience as the finale of the activation. Guests can discover the Krug Maison universe through a dedicated symphony, created by the Japanese artist Sakomoto, which will echo the vibrations of the wine to create the perfect harmony of musical tones. The dinner will take place through the rhythm of five symphonic passages, illustrated by five cuvées, from vintage cuvées to Grandes Cuvées de la Maison.
