AN EXCEPTIONAL WINE BORN FROM AUTHENTIC CRAFTSMANSHIP
Château Gassier, a renowned estate in Côtes de Provence, was chosen by the sommelier team of Hôtel de Crillon, led by Xavier Thuizat, Head Sommelier and Meilleur Ouvrier de France, for its passion for sustainable viticulture and expertise in rosé wines.
The cuvée « Le Pas du Moine - 350 », named after the path monks took to reach Croix de Provence, refers to the altitude of Château Gassier’s vineyard. This wine draws its strength from the natural freshness of the terroir.
To preserve this freshness, the grapes are harvested at night to avoid oxidation, and every step of the winemaking process is carefully designed to maintain this crisp character. Vinified in Château Gassier’s historic concrete vats, this cuvée expresses the authentic character of Sainte-Victoire terroir with pure elegance.

Exclusively available at Hôtel de Crillon, this exceptional rosé wine introduces a new level of luxury for the hotel’s discerning restaurant guests. Encased in Maison Gassier’s elegant hexagonal bottle, this cuvée is a harmonious blend of Syrah and Rolle.
Côtes de Provence Sainte-Victoire rosé reveals a crisp, thirst-quenching bouquet of white peach, apricot, and violet. Its delicate profile pairs flawlessly with the Michelin-starred cuisine of L’Écrin, as well as the innovative creations at Nonos par Paul Pairet, offering a perfect symbiosis between culinary craftsmanship and fine wine.
With the arrival of this cuvée, Hôtel de Crillon ushers in the spirit of spring and summer. Beginning in late March, guests can indulge in the inviting atmosphere of the hotel’s renowned restaurants or the serene beauty of Cour d’Honneur and Cour Gabriel.
