Back to the Roots
During this culinary experience, guests will travel back to the roots of ancient Mexican cuisine as they learn the pre-Hispanic technique of “barbacoa”. The experience will begin in the morning when guests meet with Chef Jesus Chuc, who will present quality meat from local farmers. With Chef, guests will wrap the meat in Maguey leaves and place it in a heated, underground barbacoa oven. The meat will be covered, and over the next seven hours, it will cook slowly in the heated oven and become tender and richly flavorful. That evening, guests will gather at a communal table to enjoy a traditional barbacoa dinner with fine mezcal and traditional salsas.
This experience can be enjoyed by up to ten guests at a time and there is a minimum of six guests.
