Hôtel de Crillon, A Rosewood Hotel collaborates with Chef Paul Pairet to revisit the offering of the current Brasserie d'Aumont in autumn 2021. This will be the Chef's first menu creation in France and Europe since the 2000s.
Paul Pairet currently spearheads three innovative restaurants in Shanghai: Ultraviolet*** as well as Mr. & Mrs. Bund and Pollux. It is in the latest direction that Paul Pairet and the teams at Hôtel de Crillon will re-invent the Brasserie d'Aumont.
