A stylish destination combining local Hong Kong classics with international flair
March 18, 2019
Named after the historic Holt’s Wharf upon which Rosewood Hong Kong stands today, Holt’s Café is a stunning new destination that elevates traditional & historic Hong Kong Cha Chaan Teng culture to an upscale, lively contemporary experience. In keeping with the property’s commitment to residential luxury and supreme comforts, New York-based design studio tonychi placed the spotlight on creating a plush and transformative experience for guests. With glamourous interiors featuring inspiration from Europe’s fin de siècle grand cafés and brasseries, Holt’s Café boasts rich materials throughout – intricate wooden inlays, artful lacquered walls, opulent display cases, rose gold fixtures and blush velvet seating – complementing elements such as Gillie and Marc sculptural statuettes, tobacco glass lighting, and photographs of Hong Kong urban life. A semi-private dining room adds to the sense of limitless possibilities in this quintessential & historic Hong Kong café with a modern twist.
A Taste of Hong Kong and Beyond
An open dining concept invites patrons to soak in the sights of the action-packed kitchen at Holt’s Café, where a talented culinary team helmed by Chef de Cuisine Kwok Wai Chung serves a diverse mix of comforting creations marrying Cantonese dishes with international influences.
Underscoring the commitment to a faithful local dining experience, the breakfast selection will include comforting Hong Kong favourites. Lunch brings a focus on dim sum, barbecued meats and noodles while dinner showcases European classics. Each day, an expansive marble island will display a smorgasbord of offerings – continental breakfast spreads in the morning followed by charcuterie and salads in the afternoon. Guests are invited to enjoy Holt’s Café’s menu from the sumptuous Tea Conservatory or from the breezy outdoor terrace overlooking bustling Salisbury Road, where verdant topiary planters and inviting seating from Janus et Cie beckon for a relaxed al fresco experience.
Distinctive Connoisseurship
A refined focus on tea and coffee sets Holt’s Café apart; and the tea programme features a range of top-quality selections. Guests can choose from an extensive list featuring Chinese teas, much-loved signatures such as Hong Kong-style milk tea, cold-brewed offerings, plus a world-class mix of premium aged, single-origin herbal blends and rare vintages. Patrons are also welcome to purchase fine teas directly from the Tea Conservatory, a distinctive retail experience located within Holt’s Café. Coffee aficionados will be delighted to discover the menu’s locally roasted Arabica coffee, brewed to perfection using cold-brew, hand-drip and Chemex methods.
Design in Detail
Tony Chi’s design vision for Rosewood Hong Kong was to implement a sense of legacy and luxury into each and every part of the hotel.
For Holt’s Café, the award-winning designer combined a heady mix of materials, inspired motifs and cubic forms to balance the plush furnishings for an inspired aesthetic. The walls and floors boast an intricate combination of wooden marquetry and chequered lacquered panels, with further embellishment on the floors added by patterned green Italian marble. Tea accessories showcased in opulent shagreen-lined display cases are matched to contemporary sculptural statuettes by New York-based artists Gillie and Marc. Lighting from octagonal sconces and fixtures cast a warm glow on bespoke rotund white lacquer tables with rose gold tulip bases from Italy’s Interior Plus. Lending a touch of old world glamour, rhinestone peacocks nestle within each cosy seating banquette, adding to the feeling of relaxed opulence, while custom hand-painted Gracie Studio wallcoverings with a scenes of ancient Chinese tea gathering add a serene touch. In addition to the brasserie-inspired dining room fitted with powder pink velvet banquet seating and deep, rectangular booths, the outdoor terrace is a verdant oasis dotted with topiaries and plush outdoor furniture in which to further luxuriate.
The Team
Working out of the open kitchens, the Holt’s Café’s team consists of a group of seasoned Hong Kong experts, with the establishment run by accomplished operations manager, Ali Fong. Chef de Cuisine Kwok Wai Chung channels his skills and prowess into ensuring that the culinary offerings from the destination are lauded by local and international palates alike, flanked by his world-class team.
