Since opening its doors in 2018, Rosewood Phnom Penh has established itself as Cambodia's most sought-after dining and drinking destination. Home to six exquisite F&B venues – including the acclaimed Brasserie Louis, sophisticated steak and seafood grill Cuts, and contemporary Chinese restaurant Zhan Liang – the ultra-luxury hotel has earned a reputation for its refined and innovative cuisine, dazzling designs and settings, as well as its commitment to setting the gold standard for cuisine, mixology, and hospitality in the region.
“Rosewood Phnom Penh has played an outstanding role in bringing Cambodian gastronomy to the world stage, and I am humbled to oversee so many respected restaurants under one roof. I look forward to contributing my own touches and elevating every bite for our discerning clientele,” says Chef Van Dyk. “I am also grateful for the opportunity to work with the next generation of Cambodian chefs, explore the country, and embrace the hospitality of the Khmer people.”
Recently named Director of Bars, Louison boasts more than 20 years in the mixology and hospitality industries. Born in Paris, Louison has supervised bar programs at Rosewood Le Guanahani St. Barth and Hong Kong’s renowned Lobster Bar, among other venues, and is known for his attention to detail, personalized service, and creative flair. He has also worked at leading bars and lounges in New York, Shanghai, and Paris. During his stint in Seoul, Louison led the city’s premier cocktail event, Sool Bar Week, and elevated its cocktail scene with Pussyfoot Saloon, which was named Asia's 50 Best Bars 2019's “One to Watch”.
“Since 2018, Rosewood Phnom Penh has stood apart as one of Cambodia’s leading destinations for drinking and dining, and we are continuously looking for ways to refine and elevate our F&B experiences,” says Rosewood Phnom Penh Managing Director Daniel Simon. “Chef Jan, and Bob all share that instinct and a natural desire to create authentic, meaningful experiences for our guests. Collectively, they boast over 70 years of experience in world-class F&B environments, and we are thrilled to offer this level of creative talent to our guests.”
As a testament to the hotel’s dedication to impeccable service and delicious menus, Rosewood Phnom Penh has earned many prestigious accolades. At its Legend Awards 2020, Departures Magazine honored Brasserie Louis, which specializes in French comfort food and elevated Khmer classics, for “The Best Meals We’ve Had All Year”. This year, Travel + Leisure Southeast Asia named Cuts the “Best Restaurant in Cambodia”, in addition to the coveted place the premier steakhouse earned on the World’s 50 Best Restaurants’ “50 Best Discovery” list.
With the addition of the top-ranked, talented duo to its F&B team, Rosewood is set to take Cambodia’s gastronomy and mixology scenes by storm, firmly establishing itself as the region’s top dining destination with globally recognized visionaries and unparalleled offerings.
