Aquí Me Quedo,"Here I Stay," boasts an inventive approach to casual Riviera Maya fare. Crafted by Executive Chef Juan Pablo Loza the menu features antojitos, or snacks, like Froy’s Ceviche, made with freshly-caught fish, shrimp, cucumber, red onion and avocado, tossed with lime juice, fresh coconut water and Chiltepin chile or a selection of memelas, hand-made oval masa tortillas, topped with items like Zapote wood-smoked pork belly with black beans, avocado purée, cilantro and pickled veggies.

Inspired by relaxed beachside cantinas along Mexico's Carribbean-Coast, this adults-only beach club serves its freshly-made fare from a vintage, retro-fitted truck right on the beach and offers table-side service. Guests can unwind in the lounge-style seating underneath a canopy of palm trees with complimenting refreshments include fresh coconuts, local beer, mojitos, rose wine and premium mezcal and tequila.
