Aquí Me Quedo,"Here I Stay," boasts an inventive approach to casual Riviera Maya fare at La Cantina. Crafted by Executive Chef Juan Pablo Loza the menu features antojitos, or snacks, like Froy’s Ceviche, made with freshly-caught fish, shrimp, cucumber, red onion and avocado, tossed with lime juice, fresh coconut water and Chiltepin chile or a selection of memelas, hand-made oval masa tortillas, topped with items like Zapote wood-smoked pork belly with black beans, avocado purée, cilantro and pickled veggies.

Inspired by relaxed beachside cantinas along Mexico's Carribbean-Coast, this adults-only oasis serves its freshly-made fare from a vintage, retro-fitted truck right on the beach and offers table-side service. Guests can unwind in the lounge-style seating underneath a canopy of palm trees with complimenting refreshments include fresh coconuts, local beer, mojitos, rose wine and premium mezcal and tequila.
